Chicken in Clay?

Now, here is a really great idea...a culinary innovation! One weekend at North Points Woods, there was a party that needed something showy that was uncommon and unique. Aside from serving the salad course in martini glasses, Chef Siminske wrapped the entree in bake-able clay!





Chef seasoned the chicken breast and placed it on a bedding of lemon slices and fresh sage leaves. It was topped with a sprig of thyme and dill from the kitchen's herb garden and wrapped in parchment paper. Bake-able, non-toxic modeling clay was rolled out to 1/16 inch thick and wrapped around the chicken packet to form a brick.


After being baked at 320* for 20 minutes, the bricks were set under a heat lamp in the dining room while the guests are their salads. When it was time for dinner, Chef took the bricks and lightly "whacked" them with the side of a spoon, cracking the shell and releasing the wonderful aroma into the air. A perfectly flavored, moist chicken breast was revealed as the clay was removed. Set up as a buffet, the chef unwrapped and cut the chicken for the guests as they chose a sauce and side dishes.
