Asian Chicken Wrap

The recipe below is for a wrap that was served at a meeting at Mother Angeline McCrory Manor in Columbus, Ohio. It is very simple and flavorful. It would work well as a retail item or an alternate meal. The wrap was paired with egg drop soup & green tea marinated soba noodles. It was a great combination.

Below is the fortune for the Year of the Rabbit.

A placid year, very much welcomed and needed after the ferocious year of the Tiger. We should go off to some quiet spot to lick our wounds and get some rest after all the battles of the previous year. We will all have a tendency to put off disagreeable tasks as long as possible
Money can be made without too much labor. Our life style will be languid and leisurely as we allow ourselves the luxuries we have always craved for. A temperate year with unhurried pace. For once, it may seem possible for us to be carefree and happy without too many annoyances.
Asian Chicken Wrap
12 each Diced Cooked 4 oz Chicken Breast
2 cups Sliced Bok Choy
1 cup Water chess nuts jullienne
2 each Red Peppers cut julienne
12 each Sliced scallions
1 TBS Chopped Ginger Root
1 Bunch Chopped Cilantro
1 tsp Chopped Garlic
2 each Sliced skinned Deseeded cucumber
1 oz Rice vinegar
1 oz Soy sauce
2 oz Sesame oil
Combined all ingredients in a bowl, mix and let rest 6 to 12 hours
½ cup Light mayo
2 oz Light cream cheese
4 TBS Teriyaki sauce
12 each Whole Wheat Wraps
Blend the three above ingredients and spread on the wraps prior to rolling them
*lettuce cups can be used in place of the wheat wraps
