Table-side Service at Smith Crossing


At dinner we did a new item on our weekly menu of Lemon Sole Baked in Paper. The food runner/captain brought the dish to the table with white gloves and cut the fish paper open so the steam would tantalize their senses. The chef would follow them to the table and describe what the purpose of baking in paper is all about. All the residents that chose this feature raved about the presentation as well as the flavors it gave.
