Chicken Scampi and roasted pear with caramel sauce were a huge hit at a fundraising luncheon. The Chicken Scampi was so good it will be offered on the Resident's Spring menu.

This is really easy with some pre planning. Boil a can or steam a can of sweetend condensed milk for an hour and a half. Allow the can to cool to room temperature before opening. Core the pears and place cut side down in a baking pan with butter and brown sugar to fill the bottom of the pan approximately 1/4 inch when melted. Add ground nutmeg, cinnamon and ground cloves to taste. Bake at 325'f for 35 minutes. Add chopped pecans and continue to cook 10 more minutes. Drizzel with the carmelized sweetened milk and top with whip cream.
