This month Chef Ryan featured one of our residents favorite foods!
Salmon
Chef Ryan prepared Salmon 3-ways
Cured Salmon
~Wild Atlantic salmon cured with salt, sugar and fresh dill. Chef Ryan cured the salmon for 30 hrs
Salmon Ceviche
~Wild Atlantic salmon, tomato, red onion, pineapple, avocado, cilantro, fresh squeezed lemon & lime juice
Smoked Salmon
~Wild Atlantic salmon rubbed with fresh herbs and cold smoked for 5 hrs
The trio
was served in order starting with the cured, Ceviche and smoked last.
This was done on purpose, so that as our customers tasted each of the
items; the items themselves would act as a pallet
cleanser and enable them to fully enjoy each of the dishes without one
over powering the other. The Appetizer was a huge success and our
customers are asking us when will we be doing it again!
