National Nutrition Month NorthPointe Woods

Today we tried the sweeter side of grains. We made buckwheat chocolate chip cookies! Complete with buckwheat flour and coconut sugar. The great part about these is that our gluten-free friends could enjoy them as well.

Ingredients
1 1/4 cups of buckwheat flour
1/2 tsp salt
1/2 cup coconut oil (or butter)
3/4 cup coconut sugar (or brown sugar)
1/2 tsp vanilla extract
1 egg
1 cup chocolate chips

Directions
Mix dry ingredients and set aside.
Cream butter and sugar together until fluffy.
Add vanilla and egg.
Add the dry ingredients into sugar  mixture.
Fold in chocolate chips.
Bake at 350 degrees for 12-15 minutes.
