Chef Sue at Smith Crossing has found a new way to engage her team in the kitchen. On the Fly is a bit like "Chopped" for you foodies. Each cook is challenged with preparing a different course-entrée, appetizer, etc. They are also given some not so usual ingredients they must use in their final product.
Pictured here is a creation by Ryan. He was given rice krispie, bananas, sesame oil bacon and Swiss cheese. He created an appetizer of crispy fried bananas topped with a bacon Swiss cheese tapenade with sesame oil glaze.
Also pictured is a submission from Becky who created a maple soy bruchetta with mushroom heirloom salsa and smoke provolone.
Quotes Chef Sue, "My team has enjoyed this so much that they turned the tables and did an On the Fly to me! Awesome! This is a great training tool for them and me. I get to see them collaborate with the team for ideas and I get to see some of their talent that I may not get to see otherwise. It's a great inspiration.
