Signature Vinaigrettes


We all know that it's a culinary standard to have a house vinaigrette. Below are two easy recipes for an apple cider vinaigrette and a balsamic vinaigrette. Apple cider is very seasonal and balsamic should be a staple.

Balsamic Vinaigrette


• 3 tablespoons balsamic vinegar

• 1 tablespoon Dijon mustard

• 1 tablespoon minced shallot

• 1 teaspoon hot pepper sauce

• 3/4 teaspoon salt

• 1 cup cold pressed extra virgin olive oil

• Freshly ground black pepper

Directions

In a medium bowl whisk together the vinegar, mustard, shallot, hot pepper sauce and salt. continue to whisk while adding the oil in a slow stream; the dressing will thicken. Add freshly ground pepper to taste, and adjust the seasoning. Use within an hour or so of completion

Apple Cider Vinaigrette

• 8 ounces cider vinegar

• 8 ounces apple juice

• 6 ounces brown sugar

• 2 tablespoons cracked black pepper

• 1 tablespoon cayenne

• 1 tablespoon ground cinnamon

• 2 tablespoons salt

• 1 quart canola oil

Directions

In a standing mixer, using a whisk attachment, mix in cider vinegar, apple juice, brown sugar, cracked black pepper, cayenne, cinnamon and salt. Blend on medium speed until all ingredients are incorporated. Continue mixing on low speed and add oil slowly until emulsification starts. Change speed to medium and add remaining oil.
