Wellness recipe of the month is a hit with employees at WHC


You come across a recipe every once in a while that really knocks you off from your chair.  This recipe did that for Wellness Coordinator Amanda Lynch.  When looking for a healthy recipe for individuals to take to their holiday parties she ran across this cranberry bruschetta recipe.  This sweet yet savory treat is the perfect option for any holiday party, and frankly for any time of the year that cranberries are in season.  Employees couldn’t resist the aroma coming thru the hallways and Lynch was proud to say that every last bite was gone by the time she handed out the appetizer to her fellow employees around the downtown campus.  Enjoy this one, you will not regret it! 
 
Cranberry Bruschetta
 
Ingredients:
1 1/2 cups fresh or frozen cranberries
1/4 cup sugar
2 TBSP red wine vinegar
1/2 red onion, thinly sliced into rings
2 cloves garlic, minced
2 TBSP minced fresh basil
1 tsp oregano (fresh or dried)
1- 8 oz loaf of french bread
olive oil for brushing
 
Directions:
Combine cranberries, sugar, and red wine vinegar in a medium saucepan.  Bring to a boil.  Add onion and garlic, return to a boil and reduce heat.  Simmer on low for 10 minutes or until cranberries pop.  Pour into a glass bowl.  Stir in basil and oregano.  Cool at a room temperature.  Cut bread diagonally into 16 slices; brush both sides with oil.  Broil each side for 1 to 2 minutes or until golden brown.  Top each slice with cranberry mixture.
