Something Old and Something New at The Cedars of Dexter

The "Something Old," was a good amount of teamwork; due to the snowstorm, we were a bit behind this weekend, so the servers and lead cook all helped out. Christina Wallag helped whip up the meringue for the pork loin and Brittney Worthy helped portion and form the crab cakes. Servers Emily Weber, Cindy Ziegler and Kelley Daly kept the dining room and dish room under control so that we had no breaks in customer service. Lead cook Gene Berlin ran the line by himself and made cookies and pecan pie from scratch and prepped pumpkin pies for the Holiday Table event, so that Chef Caleb could focus on the specials and menus for the holiday catering.

The "Something New," was a couple of new items this weekend that the residents were able to try, both were very well received.

The first was a roast pork loin with rutabaga puree and a fresh sage meringue.

The second item was a lump crabmeat crab cake made with a fish mousse made out of cod, sautéed peppers and onions, topped with Romesco sauce, and accompanied by a bok choy salad dressed with an apple cider vinaigrette made with local cider from the Dexter Cider Mill.
