Earth Day at The Fountains at Franklin

To celebrate Earth Day, our Supervisor, Denise Cook made a 'clean out the fridge' soup.  It was a vegetarian black bean soup loaded with vegetables that would have been not used, as they qualified as 'imperfect produce', and would have been thrown out within a few days.  It was delicious!  Her and Jaclyn Walker talked about the origins of Earth Day and served the soup to the residents, who asked that it be put on the menu, as it was that good!  They were impressed that she found a way to use up those veggies instead of throwing them out.
