Thursday’s Director’s Corner was focused on the Mediterranean Diet.
Chef Patrick prepared stuffed zucchini samplers with farro, cucumber and
tomato and a hint of olive
oil, topped off with pita. Megan, Assistant Director of Healthcare
Dining Services, discussed the highlights of the Mediterranean diet
including:

Increase plant based foods: fruits and vegetables, whole grains and legumes

Add nuts: a handful a day

Increase healthy fats: olive oil, canola oil, avocado

Decrease salt: replace with herbs and spices

Limit red meat
-
Eat fish
-
Drink wine in moderation
Residents
