Mediterranean Foods at Lake Forest Place

Last Thursday’s Director’s Corner was focused on the Mediterranean Diet. Chef Patrick prepared stuffed zucchini samplers with farro, cucumber and tomato and a hint of olive oil, topped off with pita. Megan, Assistant Director of Healthcare Dining Services, discussed the highlights of the Mediterranean diet including:
-              Increase plant based foods: fruits and vegetables, whole grains and legumes
-              Add nuts: a handful a day
-              Increase healthy fats: olive oil, canola oil, avocado
-              Decrease salt: replace with herbs and spices
-              Limit red meat
-              Eat fish
-              Drink wine in moderation
Residents enjoyed hearing about this heart healthy way of eating and ways they can incorporate its principles into their own diet with our menu at Lake Forest Place.
