Cook Club: Tomatoes


Tomatoes are in Season!
During this month’s cook club, we featured the Superfood of the Month – Tomatoes! We used fresh-picked cherry tomatoes in the salad (recipe below!) which the resident’s loved! Our residents at Bay County Medical Care Facility enjoyed the fresh ingredients and had fun helping to make the easy and delicious recipe! Read more for the FULL RECIPE

EHM Saline: Chicken Enchilada Recipe


Since Mexican Cuisine has been a popular request here at EHM-Saline, we served Chicken Enchiladas with Spanish Rice and Corn Medley as a special for lunch at Blossom Café. Our sales doubled that day and many people were asking for the recipe.

Chicken Enchilada Recipe
INGREDIENTS:
2 tablespoons avocado oil (or any mild oil)
1 small white onion, peeled and diced
1.5 pounds boneless skinless chicken breasts, diced into small 1/2-inch pieces (*or see substitution below for using pre-cooked shredded chicken)
sea salt and black pepper
1 (4-ounce) can diced green chiles
1 (15.5 ounce) can black beans, rinsed and drained
8 large flour tortillas
3 cups Mexican-blend shredded cheese
1 batch red enchilada sauce, or 1 can store-bought enchilada sauce
optional toppings: fresh cilantro, diced red onions, avocado, sour cream

DIRECTIONS:
Preheat oven to 350 degrees F.  Prepare your enchilada sauce, if making homemade.
In large saute pan, heat oil over medium-high heat. Add onion and saute for 3 minutes, stirring occasionally.  Add diced chicken and green chiles, and season with salt and pepper.  Sauté for 6-8 minutes, stirring occasionally, or until the chicken is cooked through.  Remove from heat and set aside.
To assemble the enchiladas, set up an assembly line including: tortillas, enchilada sauce, beans, chicken mixture, and cheese. Lay out a tortilla, and spread two tablespoons of sauce over the surface of the tortilla.  Add beans in a line down the middle of the tortilla, then add in a spoonful of the chicken mixture, then sprinkle with 1/3 cup cheese. Roll up tortilla and place in a greased 9 x 13-inch baking dish. Repeat with the remaining ingredients.  Then spread the remaining enchilada sauce on top of the tortillas, and sprinkle on the remaining shredded cheese.
Bake uncovered for 20 minutes.  Remove from oven and serve immediately, garnished with chopped fresh cilantro if desired.

Oatmeal Station at Blossom Cafe


To kick of Berries as the Superfood of the month, EHM-Saline hosted an oatmeal station at Blossom Café. Staff and clientele were very receptive to a morning special and requested it again in the near future.

Stove Top Maple Cinnamon Oatmeal
A warm bowl of cinnamon oatmeal is such comfort food!
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 1 servings
Calories 313 kcal
Ingredients
1 cup organic rolled oats
1-1/2 cups water
Pinch unrefined sea salt
1-2 T. pure maple syrup
1-3 T. real cream
Cinnamon
Instructions
In a small pot, bring water and sea salt to a boil.
Add oats, stir, reduce temperature to low, and cover. Allow to cook for 10 minutes. Stir again, remove from heat and let sit for 5 minutes.
Spoon into a bowl and add pure maple syrup, real cream, and cinnamon.

National Nutrition Month NorthPointe Woods

Today we tried the sweeter side of grains. We made buckwheat chocolate chip cookies! Complete with buckwheat flour and coconut sugar. The great part about these is that our gluten-free friends could enjoy them as well.

Residents and team members tasted these Dark Chocolate Smoothies during this month's Wellness stroll at EHM Sterling Heights and on this year's Lunar New Year Day.   See the recipe below!
At Lunar New Year, it’s tradition to give the gift of a bright, beautiful red envelope (also known as hóngbāo) to your friends and family. But not just any old envelope. These are filled with money - and symbolize good wishes and luck for the new year ahead.


The importance of the hóngbāo isn’t the cash held inside; it’s actually the envelope itself. The red color symbolizes good luck and prosperity in Chinese (and other East Asian) cultures.

CANADIAN MAPLE SYRUP DAY!



Today at NorthPointe Woods, we celebrated Canadian Maple Syrup Day with maple green smoothies. When hearing the ingredients, the residents were a little hesitant but once they tried them, they were pleasantly surprised!

Maple Green Smoothie
3 cups Spinach
3 Avocados
3 Bananas
Juice of 3 Lemons
6 TBSP of Maple Syrup
1.5 cups Yogurt
3 cups Apple Juice
3 cups of Ice Cubes

Throw in a blender, mix and enjoy!
