Three Crowns showcases monthly superfood: Eggs

Residents and staff of Three Crowns Park were able to try out this months super food during our monthly tasting. Chef John Barbagallo created Deviled Eggs of all kinds, including Curried, Caviar Topped, and Smoked Paprika. Dietitian Avalon Mustafa served up the protein-rich treats and presented fun nutrition facts to the residents.

Superfood Feature at Bay County Medical Care Facility

This month at Cook’s Club we featured the superfood – Tomatoes – in two unique ways. We started with delicious Chopped Caprese Salad made with fresh cherry tomatoes, mozzarella cubes and basil. We then lightly drizzled it with a Balsamic Vinaigrette. It tasted like it came straight from the garden! While enjoying our salads we sipped on Bloody Mary “mock”-tails. Did you know a virgin Bloody Mary is a good cure for a hang-over? Some of our residents did! After Andra shared many of the benefits of eating tomatoes, the residents shared their favorite ways to enjoy them. For many, it was straight off the vine with a little salt, YUM!

This month at Dining Committee we featured this month’s superfood – avocado – in two unique ways. We started with our take on deviled eggs and made a filling of mayo, paprika, and yolk with avocado to provide a great source of omega-3 fatty acids. Our residents were a little hesitant to try the green filling but ended up loving them! We then featured Avocado Fries with a crispy panko breading and avocado ranch to dip in. Avocados are a great source of many vitamins and minerals and were a great snack to kick off a good Dining Committee.

Cook Club at Bay County Medical Care Facility

As the grass is turning greener this spring, we celebrate the nutrient-packed leafy greens! This month at Cook Club we featured leafy greens as Superfood of the Month. We made an Apple-Mango-Kale smoothie and a Spinach and Artichoke Grilled Cheese! Our residents were surprised to enjoy the sweet green smoothie and loved the grilled cheese with an unexpected but delicious flavor. We spent our time together talking about the health benefits of leafy greens like the spinach and kale we featured in these recipes. Our residents always look forward to learning and trying new things at Cook Club!
