Trying Something New: Black Bean Brownies
To finish out
National Nutrition Month, we made vegan and gluten-free black bean brownies for
Bay County Medical Care Facility. A lot of people have not had vegan and
gluten-free desserts, and were surprised with the black bean ingredient. These
brownies were a perfect way to add a little fiber and protein into dessert.
Vegan & Gluten-Free Black Bean Brownies
Recipe
Serves: 12
Ingredients:
1 15oz can black beans, rinsed
2 heaping Tbsp flaxseed meal + 6 Tbsp water
3 Tbsp coconut oil, melted
¾ cup cocoa powder
¼ tsp sea salt
1 tsp vanilla extract
½ cup sugar
1 ½ tsp baking powder
Optional toppings: walnuts, chocolate chips
Directions:
1.
Preheat oven to 350 degrees F.
2. Lightly
grease muffin pan. Rinse and drain beans.
3.
Prepare “flax egg” by combining flax and water
in
the bowl of the food processor. Pulse a couple times
and let rest for a few minutes.
4.
Add remaining ingredients to food processor and
puree to a smooth texture.
5.
Evenly distribute the batter into the muffin tin
and
smooth the tops with a spoon. Add toppings.
6.
Bake 20-26 minutes or until the tops are dry and
edges start to pull away from the sides.
7.
Remove from oven and let cool for 30 minutes.
Gently remove brownies. Enjoy!
National Nutrition Month Finale Fun
To celebrate the closure of National Nutritional Month 2017, Registered Dietitians at EHM Senior Solutions-Sterling Heights incorporated a fun twist! Featuring a personalized Mango Banana Oatmeal Smoothie bowl. Delicious toppings such as blueberries, coconut flakes, sliced banana and honey can be added based on staff and residents’ preference! Everyone complimented the taste and enjoyed creating their own personal smoothie bowl.
A table display highlighting the theme of the week with “guess the grains” game. Many staff participated and enjoyed learning nutritional facts.

NNM at Four Seasons Health Care
It has been an event filled 31 days at Four Seasons Retirement Center in celebration of National Nutrition Month (NNM)! Each week we held a new activity to get residents and staff involved in the Put Your Best Fork Forward initiative. Prior to March 1st, residents were given a NNM passport that they could bring with them to each event to be stamped. If a resident collected all the stamps their name was entered into a drawing for a grand prize at the end of the month! Each event was led by our dietitian Yu-Han Huang and various members of our department. In addition to the weekly activities, we also had a display table up throughout the month that provided education material for each weeks focus. Residents who visited the display were also able to enter their name for a weekly prize drawing! The residents and staff were very eager to participate in the activities and are looking forward to next year’s celebration!

Wrapping up National Nutrition Month
Today at Dining Delights, I wanted to show our residents that it is possible to choose healthy snacks. We made oatmeal energy bites! It’s a quick and simple snack that our residents can make and keep in the fridge or freezer. I also made lemon and orange infused ice water. We talked about how the steps they can take to eating healthy and being active. We went over all the healthier substitutions that are available on our various menus that they can choose from if they don’t want our main entrees.

National Nutrition Month at Smith Crossing
In honor of Nation Nutrition Month at Smith Crossing our dietician, Maggie Stock, made a smoothie bar for our residents. The residents were able to choose which ingredients they wanted and they were provided with the nutritional value and facts about each item. The residents loved the smoothie bar and had a fun time creating their custom orders.

Vegetable Forest
Play and Learn Children’s Place is connected to our Long Term Care and STC facility at EHM Senior Solutions in Saline, MI. This National Nutrition Month, the clinical and culinary team came together to educate the pre-school-aged children on nutrition!
Nicole Blair, RDN, read a story about a dinosaur that was scared of vegetables! The kids thought this was fun and they discussed why they were not afraid of vegetables!
After reading the story to the children, Nicole and Stephanie Patton helped the kids create a vegetable forest. Chef added food coloring to ranch dressing so the kids could create a sky and grass for their vegetable forest! At the end the team donated the book and a chef’s coat and tools for their play area!

National Nutrition Month: Fresh Taco Day!
This week we celebrated National Nutrition Month with a healthier taco. We featured a ground turkey taco with black beans, Greek yogurt, lettuce, cheese, and homemade salsa as toppings. The fresh salsa was a big hit! We served the tacos with sides of brown rice and quinoa, both flavored with vegetables and herbs. This was many people’s first time trying quinoa, so it was a great experience for people to try new things this month! We also held a 50/50 and raffled off a crock pot and a KitchenAid cooking utensils set for when they can make their own healthy recipes!
