Villa St Benedict's Taste: Potato Adventure

On the 14th of this month we had our "Taste" this theme was called the "potato adventures" because every tasting had potato in some shape or form incorporated in to it.

Many people have had a 007 Martini so I decided to call this sweet potato martini the 007uber it contained Smirnoff Marshmallow Fluff Vodka, Agave Syrup, Apple Juice an of course sweet potato puree.

The second dish was a hot potato salad made with a vinaigrette of bacon, bacon fat, duck fat, and cider vinegar. The potatoes featured were purple, sweet and russet. This was topped with some pan roasted duck breast.

The third taste was the almost lazy spud because I encrusted some Alaskan cod with some egg wash and instant mashed potato granules and then sauteed the fish. I served it with tartar sauce, duck fat roasted potato and a carrot puree.

The final dish the "sweet potatoes" were made with homemade sweet potato ice cream, white and milk chocolate dipped kettle chips, toasted marshmallow and sliced apple. Next month the menu will embrace Easter and be all about eggs.
