Lobster Pancakes and more at Mohun Health Care Center


 
At Mohun Health Care Center last week we catered a social for the Board of Directors.  In the past they had ordered in pizzas for the event, but this time Chef Andy Harker wanted to put on a show for them.  He put together a spread of a cheese and fruit along with fresh made bruschetta.  The highlights of the event though were the beef tenderloin crostinis topped with a spicy roasted red pepper aioli as well as his lobster pancakes made fresh to order.  The pancakes were made from a house made batter and filled with fresh lobster, scallions, roasted tomatoes, roasted corn and shitake mushrooms.  He then topped them with a roasted red pepper coulis.  They were scrumptious!  Most importantly, our client was able to impress the board by forgoing the usual pizza.  Shown above is Chef Andy making the lobster pancakes.  Below are the bruschetta and tenderloin crostinis.
