On October 12th, the Daughters of the British Empire hosted their Midwest Organizers Meeting at Cantata. We catered the all day event. We started with a continental breakfast of homemade coffeecakes, infused waters, and fresh fruit. We continued with lunch serving a roasted vegetable quinoa salad, chicken Caesar salad, and a spicy sausage pasta. We also served 2 made from scratch soups, a roasted butternut squash and chicken noodle. We also provided homemade scones for the DBE members and the residents of Cantata.
To cap off the event we provided appetizers for the cocktail hour and dinner for the DBE members. Our appetizers included grilled shrimp and pineapple skewers, avocado crostini, and bruschetta. Our dinner menu strated with a mixed green salad dressed with a house made lemon vinaigrette. They guests had their choice of 3 entrees, braised short ribs, chicken picatta, or vegetarian lasagna. The accompaniments included baked potato or sweet potato soufflé and fire roasted Brussels sprouts. For dessert we served a house made chocolate cake with fresh berries. Everyone had a great time and they are looking forward to hosting their national meeting here in 2015.
