Scandinavian Lunch and Learn at Episcopal


Regional Chef Rob Henry created a tasting, learning and dining experience for a select group of our personal care residents.  Chef Rob discussed the culinary and ethnic background of the countries included in the Scandinavian region.  Chef Rob started the experience with a slide show featuring the geographical aspects of the country and demonstrated the making of a cheese fondue.  He then moved to a salmon rillettes, two types of herring and then to a potato soup topped with smoked salmon.  Chef Rob had a whole salmon for demonstration that he later cut, cleaned and served as the featured entrée for our Scandinavian event for the whole house.  Rob also made a Rabbit dish and served a native comfort food of boiled potatoes.  We decorated the area with a northern theme including evergreens and holly.  The residents felt very special being chosen to participate in this first of it's kind at ECH event.
