Westminster's Reserve Dinner in January

This months Reserve Dinner started as a brain storming session between ourselves dreaming of ideas and a concepts. Our theme comes from a line in the movie Blades of Glory by actor Will Ferrell
(Chazz Micheal Micheal)....."CAPTURE THE DREAM"...we took it and skated with it. The menu represents ingredients that Chef Chris and I love to cook; as well as eat. Our thought process for
writing the menu started with the thought of how most of us approach our New Years resolutions; that is we start out strong, but as time goes on our commitment to our resolution slowly fades away. 
The courses on our menu start out very healthy then they progressively go through stages of increasing vanity. Each course was paired with wine. We had a great turnout and the residents loved the dinner.

Pacific Trade WindsSea salt plank seared fillet of Hawaiian spear fish  served in a red pepper and cucumber broth with a baked taro root chip and poached edamame 
 
The Root of all Goodness Roasted celeriac soup garnished with confit of black truffle shavings and sesame seaweed salad
 
Forbidden FruitsAn intermezzo of chocolate acai berry sorbet, mango caviar and dark chocolate-godiva frozen air with black licorice
 
Exquisitely MarbledSeared American Kobe beef paired with sautéed foie gras complemented with a pinot noir-shallot reduction sauce and served with Peruvian potatoes stuffed with
 roasted sweet potatoes, roasted Chinese long beans and Thumbelina carrots 
 
Cornish CreameryWarm baked apple charlotte tart garnished with a spoon of English clotted cream and chilled blackberry coulis
