Chinese New Year at The Moorings

As the Chinese New Year quickly approaches, we decided to theme our monthly chef's reserve dinner on January 22nd around this celebration.  We kicked off each course of our "Year of the Horse" dinner with a wine paired by our DDS Kristofer Salvador.

Our 10 residents and 1 guests we're excited to get on board with us as we headed east for some festive cuisine.  Our menu is as follows:

1ST COURSE
HOMEMADE LOBSTER WONTON SOUP WITH XO SAUCE AND ENOKI MUSHROOMS
2ND COURSE
WATERCRESS AND RADISH SPROUT SALAD IN A RICE NOODLE BOWL WITH DRAGON FRUIT, FRESH MANDARIN ORANGE SEGMENTS IN LIGHT SOY & BLACK VINEGAR DRESSING
3RD COURSE
BANANA LEAF ROASTED DUCK BAO WITH PICKLED JULIANNE VEGETABLES & TAMARIND LYCHEE HOISIN SAUCE AND A DUCK CRACKLING
4TH COURSE
CLAYPOT STYLE LAQUERED PORK BELLY WITH JASMINE RICE, SAUTEED BABY BOK CHOI - CHINESE BROCCOLI AND CRISPY CHIVES
5TH COURSE
COCONUT ALMOND FINANCIER CAKE WITH COCONUT CREAM, GINGER PERSIMMON SYRUP AND STAR FRUIT
