Three Crown Park's competition plates

On Thursday, January 16th the Chef’s in The Kosteck region competed to advance to the Food Fight contest from Kraft foods.  Although Gus from Three Crowns Park didn’t advance, he food was spectacular. 
 
He offered for the savory portion a seared scallop accompanied by seaweed air, edible sand, butternut squash puree, micro watercress & topped with a piece of candied bacon.
 
 
For Dessert, or sweet, he offered carbonated fruit salad, coconut lime foam topped with a lace cookie crisp.  It was a great afternoon and sharing of ideas among the chef’s, great event!
