Diversity Moment: Cardinal Stritch Hosts Armenian Clergy


Each year a group of Armenian clergy come together at Cardinal Stritch for a retreat during Lent.  Their religious beliefs dictate that they abstain from meat and dairy (including eggs.)  Our team decided to do a little research on Armenian vegetarian cuisine and provided meals during their three day stay that were as authentic to the traditions of their heritage as possible. 
It was fun for us to experience a new cuisine and our efforts were well appreciated by the priests in attendance.  In addition to the foods pictured below we also prepared Hummus, Armenian Chickpea Salad, Armenian Vegetable Casserole with Couscous, Spinach with Chickpeas, Lentil Stew, and Honey Poached Apples stuffed with Raisins and Walnuts.
