How colorful of a rainbow can you
make?
As part of the wellness initiative, Diane Collins, R.D.
presented “Make Your Own Rainbow” with the Assisted Living residents of Chelsea
Retirement Community. She discussed the
nutrients and minerals found in all the different colors of food. Using the week- at- a- glance menu the residents
were able to identify how many different colors of food they could select on
their plate. Diane challenged the residents to see who could get the most color
on their plates at the evening meal. The residents really enjoyed this activity but
more importantly, it encouraged them to think about what foods they selected on
their plate. So take the rainbow
challenge and see how many different colorful, nutrient dense foods you can have on your dinner plate
tonight! For starters, below is a
refreshing colorful beverage:
Rainbow Water Recipe:
In a 2 quart container place the following ingredients:
4-6
strawberries, hulled and quartered
1/2 lemon, sliced
Small handful of basil, scrunched
Ice and cold filtered water
