We
recently hosted Peace Village’s annual family Christmas Party. The menu started
with an antipasti salad and then the residents had a choice of a Braised Pork
Shank in a rich tomato sauce or Beef Shank, braised in root vegetables, wine
and herbs finished with demi glacé. Both
were served over garlic mashed potatoes and baby beets, zucchini squash and
carrots. We finished the meal with
a smooth peppermint cheesecake topped with mirror glacé, accented with a clove,
white chocolate truffle and dusted with graham cracker crumbs.
