On Wednesday January 16th at Cantata we
held our monthly dinner for Wye Valley residents. We also had the pleasure of
hosting Josh Osborne, Exec Sous of Smith Crossing as a guest Chef.
The menu for the event was
three courses. We served up a fun take on Elotes as a hummus style dip with
fresh tortilla chips, for dinner chicken and beef fajitas garnished with
cilantro sour cream and avocado mousse alongside Mexican rice, then for dessert
a wonderful rum tres leche cake topped with whipped cream and cinnamon.
It was a pleasure to have Josh
with us for the day and dinner was a hit with the residents. I look forward to
teaming up again in the future.
