On June 25th, Bay County Medical Care Facility held it's
first Teaching Kitchen presented by the Dining Services department. Director of
Dining, Andra Shier and Registered Dietitian, Rebecca Pitman shared with the
residents how to "Build a Better Salad" by making a Strawberry Quinoa
Shaker Salad. Andra demonstrated proper knife cutting techniques for chopping a
shallot and how to emulsify the vinegar with the oil in the vinaigrette as the
residents made their own dressing. Rebecca shared nutrition facts about the
health benefits of eating a salad, what is important to "build" into
your salad and she also talked about the berries that we added into our salad
because June's super food was Berries. Residents then built their own salad in
mason jars, added their vinaigrette and shook them up!
Residents and staff were curious and unsure
of what to expect as the class was being set-up but several were willing to
participate, including some of the staff. Everyone commented how yummy the
salad was, how fun it was to make it themselves and commented that they
can't wait for the next one!
