Fall Pumpkin Superfood

 
Windhaven Assisted Living at Western Home Communities was full of fall colors today and the residents had the opportunity to try Honey Roasted Pumpkin with Feta.  Neil Sweet handed out samples and there was a lot of good conversations about Pumpkin.  Many of the residents commented that they had never had pumpkin other than pumpkin pie.

Made in Michigan

As a way to kick off spring, our residents at Bay County Medical Care Facility enjoyed a special “Made in Michigan” lunch! On our menu we featured a Koegel’s Coney Dog, Bush’s Baked Beans, Cucumber Salad, and Blueberry pie. Koegel’s hot dogs are a must-have in Michigan, where they have been made since the early 1900’s in Flint, Michigan! Did you know Busch’s Beans is based in Tennessee but buys all their beans from Michigan? Michigan is first in the nation for production of beans and also ranks #1 in the nation for production of cucumbers for pickling, 3rd for fresh cucumbers. Michigan is also a major producer of sugar by Michigan Sugar Company! That’s Pure Michigan!

NorthPointe Woods is loving spring!


Spring is here which means fresh and vibrant vegetables! To promote April's Superfood - Leafy Greens - we held two events this week that featured our favorite folate-friendly vegatables! Our first was an afternoon snack for the residents: power smoothies with kale.
The smoothies were prepared with all fresh and natural ingredients: kale, blueberries, bananas and crushed pineapple with honey (a natural sweetener).  Those mindful of their diets were pleased to hear that they were 'gluten and lactose conscious' drinks; they were even more pleased to drink them!

Our second event involved hosting a local senior newspaper. They enjoyed a Superfood filled lunch with steak and sauteed mushroom wraps with spinach herb shells and a side of spinach salad with dried cranberries, almonds tossed in our homemade poppyseed vinaigrette dressing. The dessert did not contain any leafy greens, but they still enjoyed Sandra's homemade pumpkin pie!

Birthday Celebration at Smith Crossing


For all of our residents with March birthdays, our chefs prepared a delicious meal to celebrate! Chef Kelly whipped up her famous Italian sausage and tortellini soup, Chef Josh prepared the all time favorite meal of steak and lobster, and for dessert they had a delicious yellow cake layered with homemade whipped cream and champagne soaked berries.
