On Wednesday October
11th Chef Dave of the Village of Indianola presented the first in a series of
three chef’s tables. This chefs table focused on Greens where he presented 9
different greens to the residents. He discussed Nutritional values, origin,
growing seasons, as well as growing regions. The residents were most surprised
by the fact that all but three of these greens are served each day on the salad bar.
As Chef presented each green he had a "guess the green" contest with coupons to
our Bistro as prizes. Many other fun facts were included such as
annual consumption of greens in the United States as well as proper storage and
how to wash and served our fresh greens. This program was a real success and the
residents are looking forward to our next two chefs tables highlighting Grains
and Spices.
