Healthy Cooking Classes at the Western Home Communities

 
 
At the Western Home Communities last Monday employees enjoyed a special sweet treat made by Wellness Coordinator Amanda Lynch. Employees were shocked to learn that it was 100% healthy and even had some surprise ingredients that they couldn’t taste! They were extremely excited to make this dish at home, and some even did the night after. It was a great time, and hope you can enjoy the recipe as well!
 
Raw Chocolate Tart
Shell:
1 1/2 cup almonds
1 1/2 cup coconut
1/2 cup maple syrup
2 dates
1 TBSP melted coconut oil
1 TBSP vanilla extract
1 tsp maple extract
1/4 tsp sea salt
 
Directions:
1.) Measure the almonds, then in a food processor or blender grind into a fine flour.
2.) Add the dates and chop with the almonds
3.) In a large mixing bowl, add the maple syrup, almond date mixture, melted coconut oil, vanilla, coconut, sea salt, and maple extract. Mix together. If the mixture is too wet add another 1/2 cup of coconut.
4.) Press the mixture into a large tart pan and place in the oven on the lowest setting that the oven can produce. Bake for 30 minutes.
 
Filling:
2 1/2 cup soaked raw cashews
1 1/2 cup cocoa powder
1 cup maple syrup
1/2 cup honey
1 tsp vanilla
1/2 tsp sea salt
1/3 cup water
3/4 cup melted coconut oil
 
Directions: Follow this order exactly, it will make all the difference in the world!
1.) In a blender or food processor, add the cashews, maple syrup, honey, vanilla, sea salt, and water. Blend well until smooth and creamy.
2.) Add the cocoa powder and blend until the mixture is totally smooth, no lumps.
3.) Lastly, add the coconut oil and blend until smooth.
4.) Fill your tart shell and place in the freezer to set for at least an hour. Remove the tart from the tart pan and store in the fridge. To serve, top with a sprinkle of sea salt, berries, or topping of choice.
