Old school Snacking with a Modern Twist at Central Baptist Village

At Central Baptist Village we have been conducting our very popular Savor the Flavors cooking series every month for over a year now. In recent months our residents have become much more active and vocal about requesting what ingredient they would like to see us demonstrate including Alligator, Turtle and Buffalo.

May was no exception as the residents asked for Pickled Pigs Feet.


Our Executive Chef Davis and our Café Chef David went to work on making the demo happen. Chef David came up with a Latin inspired tostada dish that updated an old school snack.

The dish was a surprise to many of our residents, in fact, a few of the residents asked if they could eat the pigs feet plain out of the jar.

Below is the recipe, enjoy.

Patas De Puerco

· 5 Jars of Hormel Pigs Feet – Cleaned
· 1 medium onion, diced
· ½ bunch fresh Cilantro, minced
· 1 and ½ cup sour cream
· 4 cups canned black beans, drained and rinsed
· ½ tablespoon of beef base
· ½ tablespoon garlic powder
· 1 teaspoon cumin
· Tostadas shells, warmed

Mix the cleaned pigs feet, onion, cilantro and sour cream together and chill for 1 hour.

Heat remaining ingredients and mash together.

Serve by layering the bean mixture onto the tostada shells, then topping both with pigs feet & sour cream mix.

Garnish with Cheddar Cheese, salsa and Green Onion.
