Chef Reserve Dinner at Moorings


Eleven residents signed up to enjoy what Chef Silas Pinto and Chef Jason Madel created for them.  There were five courses, each course was paired with wine. 

1st Course Mediterranean Trio 
  Thyme and Tomato Confit, Whipped Goat Cheese with Cracked Pepper and Sage, Topped with a Roast Garlic and Eggplant Puree Accompanied by Ginger Spiced Shrimp. Paired with Freixenet Sparkling White Wine, Sonoma, California
 
2nd Course Risotto
Butternut Squash Risotto Topped with Graham Cracker Roasted Pecans and Candied Herbs. Paired with 2009 One Hope Reserve Pinot Noir Michael Mondavi Family, San Luis, California
 
3rd Course Whole Wheat Pasta
Whole Wheat Pasta Tossed in a Basil Pesto Served with a Petite White Fish Fillet Served with a Seafood Broth.  Paired With a 2012 Anew Riesling Anew Winery, Paterson, Washington
 
4th Course Lamb Shank
Braised Lamb Shank Served with Truffle Whipped Potatoes and Parisian Vegetables with a Cherry Red Wine Reduction. Paired with a 2001 Graffigna Reserve Malbec, San Juan, Argentina
 
  5th Course Napoleon
White Chocolate Custard with Sautern Braised Pear Napoleon served with Brandy Caramel.  Paired with a 2007 Inniskillin Icewine, Niagara-On-The-Lake, Ontario, Canada  
The Residents gave Chef Silas and Chef Jason stand applause.  All Eleven residents already signed up for October 31st Chefs Reserve Dinner.  They are all waiting for the Halloween Feast.
