Heart Disease is the number one killer for women in the country.
An astounding statement that many women in the Cedar Valley are
determined to change. With that change comes education and displays of
healthy behavior.
That is where the dining services
team of Executive Chef Randy Husted, Registered Dietitian Megan Peters,
and Wellness Coordinator Amanda Lynch come in. From flavored water our
in the exhibit hall working on hydration and its importance to a
flavorful and exciting breakout session talking
about reducing your sodium intake for a healthy heart it was a great
day for women to gain knowledge and recognize that it is possible to
make improvements in their life no matter where they may be on their
journey thru life. Cauliflower pizza was the dish
of many at the breakout session that was sponsored by the Western Home
Communities. Chef demonstrated a delicious recipe for a cauliflower
crust and topped it with great goodies that had the women talking to
their friends and colleagues long after the session
ended. Listed below you will find the recipe that Chef prepared for
the women who attended this session.
It is continued to be an event that the dining services team enjoys
going to. To help promote the healthy lifestyle that many women and
men alike want to achieve to keep themselves in good shape long into
their older age. We will continue to help spread
the word and continue to realize that every month should be heart
month, that awareness does not have to be closed once the month is.
Cauliflower Pizza
Yield: One 9' pizza crust
Cauliflower 1 head
Egg, large 1 each
Soft Goat Cheese (optional) 2.5 oz
Oregano, dried (optional) 1 teaspoon
Fresh Garlic (optional) 1 clove
food processer
cheese cloth
parchment paper
Preheat oven to 400F
In a food processor pulse the cauliflower until a rice like texture is achieved
Cook the cauliflower in a microwave safe bowl with 1 cup of water or on the stove in a large pot for 4-5 minutes
Line a strainer with double thick cheese cloth and pour the cooked cauliflower rice into the cheese cloth
Let it sit for 10 minutes to cool down so you don't burn your hands
Wrap the cloth around the "rice" and twist it into a ball, squeezing to release the moisture (get it as dry as possible)
In a mixing bowl, mix up all the ingredients with the rice. Make sure to mix it thoroughly. (it will not seem like dough)
Line a baking sheet or pizza pan with parchment paper to prevent your dough from sticking
Press the dough onto the parchment paper about 1/3" thick, leaving the edges slightly thicker
Bake for 35-40 minutes at 400F. The crust will be firm and golden brown. Turn on your broiler when the crust is done.
Add your favorite toppings and place the pizza under the broiler for 1-2 minutes until your toppings are hot.
