Deconstructed lemon meringue pie at Felician Sisters

At the Felician Sister Michigan in Livonia Michigan we recently celebrated the Jubilee of those sisters who had taken their vows 80/75/70 years ago.  They celebrated with friends and family by invitation only.  We had 150 people come and celebrate with the sisters.  We had a wonderful event with Prime Rib, Shrimp Cocktail, Artichoke Stuffed Chicken, Corn on the Cob, and Roasted Potatoes.

As a special treat for those who didn't attend the event we created a fabulous house-made dessert so they wouldn't feel left out.  We created a Deconstructed Lemon Meringue Pie; we made fresh meringue cups and baked them, then filled them with fresh lemon mousse, topped with fresh berries, kiwi and a raspberry coulis.  The sisters all felt like it was their special day as well and want it again on our next special event.

Special thanks goes out to Chef Craig Brown at IHM in Monroe Michigan for the inspiration.
