This year at Oakwood Village Prairie Ridge, all the ladies
received a Celosia Flower. The Celosia plant is both edible and ornamental;
most commonly found in East Africa’s highlands and are used under their Swahili
name, Mfungu. Celosia grows well in places with high humidity and requires very
little attention.
Residents and family members also enjoyed an appetizer
station with vegetable crudité, cheese and sausage display, fresh fruit and
grav lox. The dessert station included a variety of cheesecake, tiramisu and
key lime pie.
The main entrees were plated and included a choice of garlic
and herb crusted prime rib with au jus, poached salmon with artichokes, leeks
and sun-dried tomato sauce, roasted basil and lemon chicken with Chardonnay
sauce.
