Henry's Famous Macaroon Recipe


Henry Roschek, our beloved baker of 20 years, is famous here at the Fountains At Bronson Place for his cookies, pies and other baked goods, especially his Coconut Macaroons! Here is Hank's famous recipe!
Coconut Macaroons
Yield: 18 dozen

32 egg whites
1/2 tsp-1 tsp cream of tartar
3 lbs granulated sugar
2 tsp vanilla
3 lbs powdered sugar
3-4 lbs coconut
2-4 lbs chocolate chips

Whip together the egg whites & cream of tartar, as whites become frothy slowly add (on low speed) the granulated sugar. Now turn mixer to Med-High Speed. Add vanilla and turn down to low speed. Add the powdered sugar. Mix well and turn the mixer up to high speed and whip until you have stiff peaks. By hand, fold in the coconut and chocolate chips. Use a #30 scoop. Bake at 325 degrees on a paper lined & Pam sprayed sheet tray. Bake with low fan for 10-12 min and turn at the half point. For a different spin on the recipe, crush up peppermints and fold into your batter.
