It's fall and we have definitely embraced the cool and often damp days by welcoming back some of our favorite comfort foods. Here are two of the dishes we have prepared for our clients. First is a Baked Caramel Apple. I poached whole cored Apples in a Honey Bourbon, filled with caramel then wrapped in a buttery pie crust and baked until golden brown and tender. I reduced the bourbon and honey down to make a rich glaze to drizzle over top.
Next is a Pasta Fagioli soup. I can't say enough about how absolutely yummy Matt Wheeler's scratch-made soups are, but this one was truly perfect for an overcast and chilly day! It is a great blend of rich roasted tomatoes and garlic, red beans and fresh herbs. We offered a slice of garlic mozzarella bread, made in-house, to make this a great quick lunch for our busy clients.
