Whole Grains Sampling Day at Chelsea Retirement Community


Whole grains, No Fooling!
On April 1, 2015 Morrison Dining Services at Chelsea Retirement Community took part in Whole Grain Sampling Day.  A beautiful display of grains were portrayed for residents, staff and visitors to “guess the grains”.  Diane Collins, R.D. was on hand to answer questions concerning whole grains, distribute recipes and to encourage everyone to make half their grains whole grains.  The Fireside Grill had special featured dishes such as a colorful quinoa salad and a wild rice salad.  It was a great way to make others aware of the protein, fiber, and other health boosting nutrients whole grains offer!
Try this whole grain and vegetable salad layered in a jar:

Barley, Quinoa, and Sprouted Lentil Salad with Orange Miso Dressing
Serves 1 portion size 2 cups
¼ c Red Quinoa, cooked
½ c Pearl Barley, cooked
2 tbsp. Red Lentils, dry
¼ c Green Beans, cut into 2 “pieces
¼ c Red Bell Peppers, diced
½ c English cucumbers, Diced
2 Tbsp. Orange Miso Dressing (recipe)

Orange Miso Dressing
6 tbsp. Miso Paste, Shiro  
¾ c Orange juice
3 Tbsp. Ginger Root, Fresh, Grated
1 Tbsp Garlic Cloves, minced
¾ c Rice Wine Vinegar, unseasoned
¾ c Canola Oil
Cook barley and quinoa package directions, overcook the grains slightly so it is tender when cold.  Soak red lentils in cold water for about 15 minutes, they will double in volume.  Drain well and set aside.  Cook green beans in boiling water for 2 minutes, drain and chill in ice water, drain again and set aside.  Whisk together salad ingredients and set aside.

For each salad in a jar arrange ingredients in the following order:
½ c cooked pearl barley
¼ c red quinoa
¼ c green beans, cut into 1/3rd and blanched
¼ c red bell peppers, diced
½ c cucumbers diced

Close container.  When ready to eat pour 2 Tbsp. of dressing into jar.  Close lid and shake well.  Eat straight out of jar or pour into a bowl.
