At The Evangelical Homes of Michigan-Saline/The Redies Center For Rehabilitation and Healthy Living, we had our first berries superfood special! We had a spinach salad, with pears, dried cranberries, almonds, served with a red wine vinaigrette. We have a special featuring berries every Wednesday and it brings about lots of happy customers who look forward to our specials. The salads are “made to order” so the customers are able to add chicken or edit their salad to their liking! We look forward to our Blossom Wednesday specials and so do the customers here at EVH. Here is our schedule for June:
06/03: Spinach Salad with Pears, Almonds
& Cranberries
06/10: Strawberry & Shrimp Salad
06/17: Couscous with Cranberries, Mint,
and Pine Nuts
06/24: Kale with Cranberries, Pecans, Feta

Chef
Chef Nicole did a Superfood Demo for our Assisted Living Residents last week at NorthPointe Woods! She set up a table with our Superfood flyers and demonstrated with the residents how to make a Strawberry Shrimp Pasta Salad using Orzo! Chef Nicole went over the health benefits of berries with our residents. This was an interesting spin on how to incorporate berries into your diet!
And in the Main Street Café at NorthPointe Woods, we celebrated “National Rocky Road Ice Cream Day” with Rocky Road Ice Cream Hot Fudge Sundaes! We haven’t had this ice cream in a while here and it was a nice change of pace! Of course a sundae isn’t complete without the hot fudge, whipped cream, sprinkles and last but certainly NOT least-the cherry!

Each month at our memory support center (EHM), we hold a number of themed events for the residents and staff. For May's, cooked to order breakfast out in the market café we made the to order Belgium waffles topped with a homemade blueberry and strawberry filling with a cream cheese icing, served with a side of bacon and fresh fruit salad. The resident and staff enjoy the memorial day themed breakfast. The warm berry toppings filled the air with a nice fruitful aroma.
