"Nourish Yourself" was the wellness topic for kicking off
the New Year with the residents at United Methodist Retirement Community in
Chelsea. New Year, Nourish You! presented
by Diane Collins, R.D. to both the independent and assisted living communities. Residents received a handout titled “Choosing
Healthy Foods as you get Older” and a
food record so at the end of a week they could to see how their food consumption
compared to the recommendations.
Incorporating the superfood of the month, beets, a snack of baked beet
chips were devoured as the resident’s.
It was a great way to learn how to incorporate more vegetables into
their daily meal plan.
BAKED BEET CHIPS
Ingredients:
1 Red Beet
1 Golden Beet
Extra virgin olive oil
Preheat
oven to 350 degrees. Using a mandolin slicer at 1/16th inch, slice beets
thinly. You want them to be the size of
a potato chip. Brush olive oil on baking
sheet. Place sliced beets, single layer,
on the baking sheet and brush olive oil over the sliced beet chips. Bake for 20 minutes and then flip the chips
and bake another 20-30 minutes or until
the edges of the chips are dried out.
Transfer to a wire rack to cool.
You
can also use this recipe for baked zucchini chips, or sweet potato chips.
