Wednesday August 27th residents enjoyed an Italian
themed dinner, known at Evangelical Homes as the 440 Dinner (Dinner at
440 Russell St.). Working together, Dining Services and Life Enrichment
planned and executed a fancy night in with Italian themed decor
and a three course meal. To start, Chef Todd Stapnowski prepared an
Italian butter bean salad with fresh tarragon and lemon zest topped with
micro-greens. Entree choices were between a Chicken Cacciatore prepared
with a rustic tomato wine sauce, bell peppers
and onions, or fresh salmon drizzled with a balsamic glaze and
garnished with a kale crisp, both served with roasted mixed vegetables
and basil infused mashed potatoes. For dessert, a delectable Tiramisu
garnished with dark and white chocolate.
