This month at EHM Senior Solutions – Saline, the
RDs and Chef put together a snack and study session for our local senior
center. Chef made hummus from scratch (see hummus recipe below), and
Christina Weber discussed how Nutrition and
Wellness connect. The participants engaged in great conversation about
current nutrition trends, proper portion sizes, and various
wellness-related topics.
Garlic Hummus
1-1/3 tsp juice, lemon
1/4 each garlic cloves, peeled, fresh
½ tsp paste, sesame tahini
¼ tsp spice, cumin, ground
1/8 tsp salt, sea
½ tsp oil, olive, extra virgin
½ can beans, garbanzo, canned, drained, rinsed
Place chickpeas, garlic, lemon juice, tahini,
cumin, and salt in the bowl of a food processor. Process until starting
to break up the beans, about 1 minutes. Add the olive oil and water.
Puree until smooth and creamy. You may need to
scrape down the sides to ensure all the beans are pureed. Chill in
refrigerator and serve cold.
