What is Foodology you may ask?
Foodology is an informal gathering of residents and
production staff members twice a month and it is hosted by our Executive Chef
Rob Campbell. Chef Campbell acquires exotic and specialty items to introduce to
the residents and production staff. These items (ingredients) can be just coming
into season, or ingredients the Chef would like to introduce into his menus.
It’s an hour of food discovery that not only educates the production team and
residents alike, but many times are items Chef Campbell has not yet had the pleasure
of cooking with himself.
”It’s an hour twice a month dedicated to increasing our food
knowledge, with every gathering we host, it further cultivates Smith Village
into a community centered around Culinary Excellence”, says Chef Campbell.
The evening before table tents are placed on at the tables in
our independent dining room with a clue pertaining to the mysterious
item/ingredient. This drives resident participation and thus turns into their
topic of the night at the table.
One of this month’s ingredients…”What’s
green…unfurling…tastes like asparagus and is only available for 3 weeks in May”?
The answer….Fiddlehead Ferns
The best way to cook them is by blanching them in salted
water, then sauté lightly with butter. They are delicious!!!
