Our Memorial Day Barbeque at Smith Village featured
many of our resident’s favorite foods, including barbeque ribs, grilled
southwestern chicken, and beer brats. Our dessert table was filled
with delicious homemade treats such as American
flag cookies, created by our Sous Chef, Kara Superczynski. Although it
was a rainy Memorial Day, our buffet was a hit with residents and their
families.
3 c. butter, softened
4 c. white sugar
8 eggs
2 teaspoon vanilla extract
10 c. all-purpose flour
4 teaspoons baking powder
2 tea spoon salt
red food coloring
blue food coloring

In a large bowl, cream together butter and sugar until
smooth. Beat in eggs and vanilla. Stir in the flour, baking, powder,
and salt.

Divide dough into thirds. Using food coloring, color one third red and one third blue. Chill dough for 30 minutes

Roll red and white (plain) dough into ¼ inch thickness and
cut 2x12in rectangles. Starting with red on the bottom, stack 4 layers
total.

Roll the blue dough into a 12 in long rectangular prism, and place towards the left of the red and white layers.

Roll addition red and white layers, and stack until they are even with the top of the blue (about three more layers).

Refrigerate log for one hour.

Cut ¼ inch flag slices and place 1 inch apart on ungreased
cookie sheets. Use white sprinkles in the blue section to create
“stars”.
8.
Bake cookies at 350 degrees F for 8 minutes.
