Eating Local at Cardinal Stritch


It's hard to get more local than your own backyard.

This month, we noticed that two apple trees were bursting with fruit in the Stritch Retreat House courtyard gardens.  A staff-wide taste test revealed that the fruit was viable, if a tad tart.  We all agreed a cooked application would be best.
 
 
Our client, Father Lyle, took the lead in harvesting the fruit.  He is thrilled that we are able to put the fruit to use.
 
We are serving house-made applesauce for breakfast and house-made from scratch apple tarts for dessert this month.
