Cooking with the Chef- Smith Crossing

This month for Cooking with the Chef at Smith Crossing, Chef Davis Knight educated our residents on a Valentine’s Day favorite: Chocolate!  Chef taught the residents the differences between dark, milk, and white chocolate as they sampled each one. 
 The residents were shocked to find out that white chocolate isn’t genuine chocolate since it does not contain cocoa powder.  Chef Davis showed the residents how to make ganache and turned it into cranberry chocolate bark.  The residents loved the chocolate lecture!
