At the Church of Christ Care Center, Our Lead Cook (Katrina Martin) did a cooking Demo with the Residents. The demo was Creamed Spinach and Carrot Puree. The Spinach went with the Superfood theme of Leafy Greens. In the demo she made the residents Carrot Puree. The residents thought it was a good demonstration and like the artistic style she had with the puree foods.
Recipe for Creamed Spinach:
1 Medium Onion Chopped
1 cup Heavy Cream
1 T Chicken base
In an frying pan Sautee onion until translucent. Add Cream cheese, chicken base and heavy cream. Stir until cheese is melted and mixture comes to a boil. Add Spinach handfuls at a time until reduced down and spinach is tender.
Add pasta to the Creamed Spinach and plate with grilled chicken breast over top.
Add Artichokes and serve with crackers as a dip.
