On Wednesday July 8th our Dining Room Supervisor Latoya Price created a beautiful on display in the dining room. She prepared a fresh summer salad with mixed greens, sliced strawberries, chopped walnuts, dried cranberries, bleu cheese, and a house-made strawberry vinaigrette dressing. Residents enjoyed Latoya’s salad so much that they returned for a second and even third plate! The strawberry summer salad has been added to the menu so residents have the opportunity to enjoy for many summer days to come!
Strawberry Vinaigrette Recipe
Serves 4
1 Cup of Strawberries
1/4 Cup Balsamic Vinegar
1/4 Cup Extra Virgin Olive Oil
1 Tbsp. Dijon Mustard
1 Clove of Garlic, Minced
1/4 tsp. Salt
1/4 tsp. Pepper
Dash of Sugar
